Putting effort into cooking does not simply mean honing your culinary skills. What is important is "what kind of ingredients" we use in our cooking. We would like to introduce some of the ingredients that we are particular about.
Dashi is the base of Japanese cuisine. If you cannot make good dashi, all Japanese dishes will be a failure. At our restaurant, we use the highest grade of soy sauce made from light soybeans, Hokkaido kelp, Makurazaki dried bonito flakes, and mixed flakes to slowly prepare dashi soup stock. The dashi broth made from the finest ingredients is characterized by its depth of flavor and raises the level of Japanese cuisine. Our dashimaki tamago, in particular, offers the full flavor of dashi broth, so please try it for yourself.
Soy sauce is indispensable when eating sashimi. Of course, we put a lot of effort into our soy sauce. The water used as the base of our soy sauce is from the rich subsoil water of the Hakkouda Mountain Federation. The salt we use is natural salt from Shark Bay, a world heritage site known for its mild taste.
