As the season is changing, let's eat delicious food and stay in good shape to avoid catching colds.
Rakuzo Chofu Minamiguchi serves chicken dishes that bring out the best in our chefs, and other delicacies made with carefully selected ingredients from the mountains and the sea.
Among them, I would like to introduce some of Rakura's special ingredients.
Rakura uses a flavorful broth made from the highest quality soy sauce made from light round soybeans, plenty of bonito flakes from Makurazaki, and kelp from Hokkaido.
The taste of Japanese food is determined by the dashi (Japanese soup stock), so please enjoy its mellow flavor.
Our recommendation is the "Dashi Aroma Kochi Dashimaki Tamago" (rolled egg) made with plenty of dashi broth.
Rakura Soy Sauce is made from the clear underground water from the Hakkouda Federation.
We also use natural salt from Shark Bay, a World Heritage site, which gives it a rich and mellow flavor.
We recommend simply dipping it in fresh sashimi from Rakurakura, and we hope you enjoy it.
