Dashi" is the key to the flavor of Japanese cuisine, and its aroma is an important element as well as its umami taste. To make aromatic dashi, carefully selected ingredients and meticulous work are necessary.
We use bonito flakes from Makurazaki, Kagoshima Prefecture, Japan's largest producer of bonito flakes, to create a gently fragrant and refined dashi that infuses the umami of bonito flakes and kombu.

In the Kyushu region, flying fish is called "ago. The dashi made from flying fish is called "chin dashi," and it is characterized by its elegant and rich flavor.
Our recommended "Agoodashi Tofu" is a dish that allows you to savor the rich umami of the dashi broth. Please enjoy it with plenty of dashi.
Sake is the perfect accompaniment to dashi-scented dishes.
