Many of our dishes look simple but are actually a bit elaborate. Seared dishes are one of them. Little things such as the amount of heat, distance from the fire, and time make a big difference in the flavor.

A dish that is already delicious as it is can be made even tastier by adding a little more effort to the searing process. The "Aburi-Seared Mackerel" is a dish made with such an extra touch of searing. The seared mackerel alone is a complete dish, but searing adds a savory flavor and mildens the acidity a little. The flavor of the mackerel is concentrated and the dish tastes much better than usual vinegared mackerel.
Seared Salmon Sashimi with Grated Shiso Leaves" is another dish where the final touch really makes a difference in the flavor. The surface of the salmon is quickly seared to bring out its sweet and delicious fat. It is served with grated shiso leaves, so use it when you want a crispy and refreshing meal.
