Hello, I am the PR person in charge of Rakuzo Utage Ebisu Higashiguchi Ekimae Store.

Dashimaki Tamago, a typical egg dish, is loved by people of all ages, both men and women. In this issue, we would like to introduce our dashimaki tamago. We hope you will enjoy the taste of Rakura's dashimaki tamago, baked with a special attention to dashi broth.

 

The key to dashi broth is soy sauce and dried bonito flakes.

At our restaurant, we offer dishes that focus on dashi, the basic ingredient of soup stock. The bonito flakes that form the basis of our dashi are made from Makurazaki bonito flakes, which are produced under strict quality control in Makurazaki, a town that boasts one of the largest catches of bonito in Japan, using a process that has a long history and tradition of bonito flakes production.

The soy sauce is made from carefully selected top-quality soybeans and wheat. It is a naturally brewed light soy sauce with a mellow aroma and mild sweetness, called "Marudaimame Awakuchi Shoyu".
