Have you ever had redfish? It lives in the deep sea at a depth of about 500 meters. It is a type of menuke, also called alaska menuke, and is over 40 cm in length. The seafood main dish of the course, introduced here, is "Red Fish with Seaweed Tartar Nanban. Only a few fresh ones are distributed in Hokkaido and other parts of Japan, and the freshest ones are tasty and flavorful when served as sashimi. In addition, it can be enjoyed marinated in soy sauce, marinated in sake lees, pickled in Saikyo (Kyoto), or dried. In this course, it is served battered and deep-fried with a crispy texture, and served with tartar sauce. Also, the main meat dish is saikyo-yaki (grilled young chicken). Please enjoy the collagen-rich and juicy chicken.
