While the true octopus is in season in winter, the water octopus is in season in summer. It is called "mizu-dako" (meaning "water octopus") because its body contains more water than that of the true octopus. It is also called "Hokkai-dako" (northern sea octopus) because it is caught mostly in northern regions.
The meat is characterized by its softness and sweetness, and is most delicious as sashimi! Please try both thinly sliced legs and suckers to compare the differences.
