Have you checked out our "Season's Recommendations" yet?6Seasonal seafood dishes have also been included in this summer's limited "Seasonal Recommendations," which started in early May.

This time, from our popular "Season's Recommendations," we introduce our staff's favorite seafood dish. Please enjoy the delicious dishes only available at this time of the year.

 

Crispy battered hamo katsu!

Hamo Katsu (hamo cutlet), not hamo cutlet, is now available in the "Season's Recommendations" menu. Hamo Katsu with grated plum paste ponzu sauce and sansho (Japanese pepper) salt" is a dish in which freshly harvested hamo (conger eel) is made into a delicious cutlet with a crispy batter. The hamo (conger eel) has an elegant and hearty flavor, and the hamo meat is very tender and fluffy even when cut into pieces. To enjoy this summery and refreshing fried dish, we used a sauce made of grated ume plum ponzu and sansho (Japanese pepper) salt. The acidity and tangy stimulation are perfect for hot days.

We hope everyone will enjoy "hamo katsu" with a special occasion feel, different from the ham katsu you may want to eat on a daily basis. It goes well with sake, shochu, lemon sour, and dry white wine!

 

And fatty sunfish!

Hiramasa, known as a high-end fish, is becoming more and more delicious this time of year as it comes into season. We have prepared this seasonal Hiramasa as "Sesame Hiramasa". The fatty fish has a rich, rich flavor. Instead of the standard soy sauce, the fish is tossed in a rich sesame soy sauce. It is a gem with a deeper, richer flavor and a more snackable feel.
