Kyushu is said to be a treasure trove of culinary specialties, with a variety of popular dishes from different genres. We have recreated the tastes of Kyushu that continue to attract locals and tourists alike! Here are three selected Kyushu gourmet dishes that we highly recommend.
Toriten is a local dish of Oita and is said to have originated in a restaurant in Beppu. We use salt kouji as a secret ingredient to give it a very soft texture. It is seasoned perfectly with sake.
Very savory, crispy on the outside and juicy on the inside! Serve with crispy grated ponzu (Japanese sauce made from grated radish and citrus juice) if you like. Since it is lighter than fried tofu, you can eat it as much as you like.

When it comes to horse sashimi, Kumamoto is probably the best. Although there are stores serving horse sashimi in the Tokyo metropolitan area, the fresh horse sashimi from Kumamoto is by far the best. Please enjoy it with Kyushu's sweet soy sauce if you like.
Raisan Pork is a high quality pork raised at Raisan Idea Ranch in Itoshima City. It is more resilient than ordinary pork, yet extremely soft, and the sweet fatty meat and savory flavor will whet your appetite. It is a perfect accompaniment to alcoholic beverages.
We are still incorporating Kyushu's local cuisine into our menu. We hope that many of you will enjoy Kyushu specialties such as Hakata Mizutaki and Miyazaki Chicken Nanban. We also invite you to try our signature seared and grilled dishes, sashimi, and other creative dishes that make the most of fresh ingredients.
