Hello, I am the PR person in charge of Rakuzo Kanda store.
Recently, the days with strong sunshine have been increasing, making us nostalgic for the passing spring.
How are all of you doing?
In this issue, we would like to introduce some of our specialties and ingredients that we especially recommend.
It is no exaggeration to say that the taste of Japanese food is determined by the dashi.
Our restaurant uses the highest quality soy sauce with a light soy sauce base and soup stock made from a generous amount of bonito flakes and mixed flakes from Makurazaki and kelp from Hokkaido.
The broth, which is concentrated with the umami of the ingredients, is highly aromatic and extremely mellow.
The fluffy, artisan-rolled egg is a delight to the palate.
This excellent dashimaki tamago, made with the utmost attention to dashi (Japanese soup stock), goes very well with sake.

Rakuzo's special soy sauce is made using subterranean water from the Hakkouda Federation.
In addition, the use of natural salt from Shark Bay, a World Heritage site, gives the product a mellow taste.
It goes very well with fresh and tasty fish, and you can feel more of the original umami flavor.
