Have you tried Rakuzo Kanda's seasonal menu? This time, we would like to introduce one of the menu items, "Hatsu Gatsuo no Shio Tataki" (Salted Hatsu Gatsuo Tataki).
Bonito is in season twice a year.
Hatsu-gatsuo" is the skipjack that travels north on the Kuroshio Current in the Pacific Ocean from spring to the beginning of summer, and "kita-gatsuo" is the skipjack that returns to the south as it cools down in the fall. The difference in taste is that hatsu-gatsuo has a light flavor, while the returning skipjack is fatty.
Our recommended menu item, "Hatsu Gatsuo no Shio Tataki (Salted Hatsu Gatsuo)," features such refreshingly delicious Hatsu Gatsuo served with the famous Kochi dish, Tataki.
The salt used for this "Hatsu Gatsuo Salt Tataki" is also our special blend.
Combination of Setouchi floral salt and salted kelp.
Setouchi Hanamo Salt is made by double-stage pickling of Setouchi seaweed, which brings out the full flavor of the seaweed, resulting in a moist, coarse salt with a mellow taste.
