Imo-jochu is an alcoholic beverage characterized by the strong, mellow aroma and sweetness of sweet potatoes. Because of its strong character, the aroma of imo-jochu will overpower the dish if it is a simple dish that makes the most of the flavors of the ingredients.
Good matches are well-seasoned and sweet dishes. Kagoshima's native sweet potato shochu and Satsuma-age, a local dish of Kagoshima, are definitely a good match.
