Hello, I am the PR manager for Rakuzo Kashiwa.
Our restaurant uses Japan's finest ingredients from season to season to provide you with dishes that maximize the flavor of seasonal ingredients. Of course, we use only the finest ingredients. We hope you will enjoy our dishes, which are made with the utmost care and attention to detail, down to the "dashi" (soup stock) that forms the basis of the dish and the "shoyu" (soy sauce) that is so important for the sashimi.
At our restaurant, we offer dashimaki tamago (rolled egg) with a focus on "dashi" (Japanese soup stock). For the dashi, we use Makurazaki dried bonito flakes, which are made using a process that has a long history and tradition of bonito flakes production. For the soy sauce, we use "Marudaima Awakuchi Soy Sauce," a naturally brewed light soy sauce with a mellow aroma and mild sweetness. The dashimaki tamago (rolled egg) made with dashi broth from Hokkaido kelp has an exquisite flavor.
The hot dashimaki tamago is carefully rolled to order, and when you take a bite, the flavor of the dashi spreads out from the fluffy egg and fills your mouth, giving you a different taste experience.
It is the "soy sauce" that makes the sashimi even more delicious. We use soy sauce made from underground water from the Hakkouda Federation and natural salt from Shark Bay. Its mild flavor is a perfect match for fresh fish.
