For the dashi, we use Makurazaki dried bonito flakes, which are made using a process that has a long history and tradition of bonito flakes production. For the soy sauce, we use \"Marudaima Awakuchi Soy Sauce,\" a naturally brewed light soy sauce with a mellow aroma and mild sweetness.
