Hello, I am the PR person in charge of Rakuzo Koriyama Ekimae Store.
One of our most popular dishes is motsu nabe, which is rich in flavor, low in fat, and low in calories. This nabe dish is favored by a wide range of customers for its health and beauty benefits. There are two different names for the motsu, "aka motsu" and "shiro motsu," depending on the part of the fish.
Both are available at our restaurant. In this issue, we would like to introduce "aka motsu nabe" and "shiro motsu nabe".
Motsu is a general term for the internal organs of cattle and pigs. In Kansai, it is called "horumon" (hormone). Among them, akamotsu, as the name suggests, refers to motsu with a red color and is rich in iron and vitamins.
This motsu nabe is light, but you can still taste the flavor of the meat.
Just as akamotsu refers to red-colored motsu, shiro-motsu is a general term for non-red-colored motsu. Specifically, it refers to the intestines and stomach. In most cases, the term "motsu nabe" refers to white motsu nabe. In shiro-motsu nabe, the fatty intestines (shimacho) create a rich umami flavor that is addictive.
