Hello, I am the PR person in charge of Rakuzo Kobe Sannomiya Store.

Our motto is to provide authentic Japanese cuisine at a reasonable price, with the ingredients and cooking methods carefully selected and time and effort put into each dish, in the hopes that our customers can enjoy authentic Japanese cuisine in a casual setting. In fact, our attention to detail shines through even in the seasonings we use for our dishes. Today, we would like to introduce a few of the secrets to the deliciousness of our restaurant.

 

The dashi broth is the key to the flavor.

Dashi-maki Tamago (rolled egg)
It is no exaggeration to say that the taste of Japanese food is entirely determined by the dashi broth. At Rakurakura, we use the finest maru-soy bean light soy sauce and combine it with dashi broth made from a generous amount of Makurazaki bonito flakes, mixed flakes, and Hokkaido kelp. The dashi broth is elegant and mellow, and it sets the flavor of all our dishes perfectly. This dashi is the secret to the deliciousness of our restaurant. We hope you will enjoy our dashimaki tamago, which is made fluffy with plenty of dashi broth and full of dashi flavor.

 

Special soy sauce to enhance the flavor of seafood

The taste of soy sauce is entirely determined by the water. Rakura's special soy sauce is made with water from the Hakkouda Federation and natural salt from Shark Bay, a World Heritage site, to create a mild taste. It is a mild soy sauce with no corners that enhances the taste of seafood. Please enjoy it with fresh seafood such as sashimi platters.
