Of course, we are particular about the \"dashi\" (soup stock). We use the highest quality soy sauce made from whole soybeans, the best quality dried bonito flakes and mixed flakes from Makurazaki, Kagoshima Prefecture, and dashi broth made from Hokkaido kelp.
