We are “Rakuzo Utage Matsumoto Ekimae,” a restaurant located in front of Matsumoto Station that serves Japanese cuisine celebrating the changing seasons. Today, we’d like to introduce our “Seasonal Specials,” a menu available only now to mark the arrival of spring.

A masterpiece that captures the scent of spring and an elegant umami flavor

The first dish we’d like you to try is “Deep-Fried Spanish Mackerel with Bamboo Shoots.” The refined umami of the Spanish mackerel, which fills your mouth, combined with the refreshing aroma of the bamboo shoots, makes this a dish that truly lets you feel the arrival of spring.

Our “Freshly Seared Bonito Tataki” is seared quickly over high heat to lock in the fish’s natural flavor. Enjoy this refreshing dish with four types of aromatic condiments and a zesty ponzu sauce.

A variety of creative Japanese dishes that showcase the chefs’ dedication to craftsmanship

For a snack to go with drinks, we highly recommend the “Spring Shiitake Mushroom Skewers with Prosciutto and Cream Cheese.” Having weathered the harsh winter, these firm shiitake mushrooms release a surprisingly rich umami flavor when grilled. The mellow cream cheese and the saltiness of the prosciutto create an exquisite harmony—a surefire way to make your drinks go down even smoother.

In addition, we’re introducing the visually stunning “Negitoro Yukke Platter with Kimchi-Cheese Sushi Rolls.” We’ve wrapped rice infused with the aroma of sesame oil and various fillings in nori, then generously topped it with negitoro. When you coat it generously with the rich egg yolk sauce, a melt-in-your-mouth flavor spreads throughout.
