Hatcho miso is the hometown taste of Aichi Prefecture, named after the place where it was made, eight chou (about 870 meters) west of Okazaki Castle, the birthplace of Tokugawa Ieyasu.
Its dark color might lead one to believe that it is salty, but in fact it is made with a low level of salt. The dark color is due to the fact that it is made by aging it for a long period of time, and its unique flavor is loved by the locals.
