Oita's local delicacy, Ryukyu (cold yellowtail).
Yellowtail, which becomes even more delicious in winter with its fatty taste, is served with Ryukyu, a local dish of Oita Prefecture. Ryukyu is a dish in which yellowtail sashimi is marinated in sesame soy sauce, rather than the standard sashimi served in soy sauce. This dish offers a richer, richer taste than regular sashimi and is very satisfying to eat. Expect a superb dish in which the sweet fat of the cold yellowtail is matched with the savory flavor of the sesame seeds.

Celery is a vegetable that can be found in supermarkets year-round, so many people may not think of celery as having a season. It is seasoned with lemon and raayu (Chinese red chili oil) to give it a unique flavor. This is a spicy and addictive snack that will make you want to drink beer without stopping.
