Our sashimi features the freshest seasonal fish.

The key to sashimi is the way it is cut.

While the fish itself is of course delicious, the way it is cut is very important for better taste.

Have you ever seen an itamae-san cutting sashimi?

Sashimi is soft and easily crumbles, so the key is to cut it in such a way that it takes as little strain as possible.

"Pull and hang up."

Place the knife in front of the fence and pull it toward you while cutting in one smooth motion.

If you apply the knife repeatedly, pushing and pulling, it will not look good and the cut will be crushed, resulting in a loss of flavor.

Flat slice."

When you look at a sashimi fence, you will see white streaks (muscle sinews/fibers). Place the fence on the cutting board so that these streaks go from the top right to the bottom left.

Cut the fence by placing and pulling the knife so that it is perpendicular to the front of the fence. Cut in order from the right side of the fence to the left.

"Cutting to pieces."

This is a thinner cut with a larger cross section than the flat cut. It is suitable for fish that are easier to eat when cut thinly, such as white fish and carpaccio.

Place the fence at an angle, tilt the knife at a 45 to 20 degree angle, and slice it gently while pulling it toward you.

Unlike the flat cut, the cuts are made in sequence from the left side of the fence to the right side.

We hope you will use this as a reference when cutting sashimi at home.

Sake goes well with sashimi.

Various Japanese Sake - 500 yen per glass (excluding tax)

Ichinokura (Miyagi / clean taste)

KAGATOBI (Ishikawa / sharp and dry sake)

Urakasumi (Miyagi / light flavor)

Hakkaisan (Niigata / clean and dry)

We have a selection of excellent sake that goes well not only with sashimi but also with fish dishes.

Please enjoy it with fresh fish.
