Hello, I am the PR person in charge of Rakuzo Omiya Higashiguchi Ekimae Store.

和食といえば、やっぱり決め手は出汁です。運ばれてきた料理からふんわりと出汁の香りが漂うと、日本人ならついホッとするような、優しい気持ちになりますね。

今回は当店自慢の出汁をたっぷり味わっていただける逸品をご紹介します。

 

ふわふわの口当たり 出汁が香る出汁巻卵

当店の人気の逸品「だし香るこだわり出汁巻卵」。枕崎産の鰹節と、北海道産の真昆布で取った1番出汁をたっぷりふくませて焼き上げました。一口食べるごとに、口の中で広がる出汁の旨味をじっくり味わえます。

 

〆にもぴったり 本日のあら汁

当日に仕入れた魚のあらを使用した「本日のあら汁」は〆の一品として人気です。あらを加えてじっくり出汁を取ったあら汁は、魚の旨味がたっぷり。また、飲んだ後のあら汁は二日酔いを防ぐ効果も。おなかがいっぱいでもさらっと飲めてしまうあら汁は最後の一品におすすめです。

 

トビウオの出汁 あご出汁たっぷりの「あごだし豆腐」

あご出汁とは、トビウオから取った出汁のことです。海の上を飛ぶトビウオは、筋肉が発達していて脂肪分が少ないため、良質で雑味がない出汁が取れると料亭などで使用されている高級品です。「あご出汁」と呼ばれるのも、あごが落ちてしまうほど美味しい、という説もあるほど。豆腐とあごだし、それぞれの良さを引き立てた一品です。
