There are many seafoods that are in season in winter, and one of them is albacore. One of them is "shirako," which has a rich, deep umami taste and a creamy, melt-in-your-mouth texture that is irresistible. A delicacy using this luxurious winter delicacy is the "Deep-fried Shirako and Shirako Tofu" for 649 yen (tax included). In addition to the milt itself, the homemade "Shirako Tofu," which is made by kneading the milt with kuzu (arrowroot) flour, is deep-fried.
