Hello, I am the PR person in charge of Rakuzo Osaki Center Building Store.
A little bit of thought goes a long way in changing the taste of a dish. We are particular about the dressing and dashi that we use for our dishes. We would like to introduce our specialties of dressing and dashi that support the flavor of our delicious dishes.
We are particular about seasonings for our Western-style menu items. The "Avocado Carpaccio with Hijiki Cheese Dressing" is popular among women. Hijiki, which has an image of Japanese food, and cheese are seemingly incompatible ingredients, but they are a perfect match! The mildness of the cheese and the avocado match each other, making this a very popular snack.
It is no exaggeration to say that the depth of dashi broth determines the flavor of Japanese cuisine. Our dashi broth is made from Hokkaido kelp, dried bonito flakes made using a traditional method handed down for about 300 years in Makurazaki City, Kagoshima Prefecture, and mixed flakes full of the flavor of fish other than bonito. Umami components derived from fish and plant-based umami components derived from kelp support the deep flavor of Japanese cuisine menus.
