Our dashi broth is made from three ingredients: kelp from Hokkaido, dried bonito flakes made using a traditional method handed down for about 300 years in Makurazaki City, Kagoshima Prefecture, and fish other than bonito. Umami ingredients derived from fish and plant-based umami ingredients derived from kelp support the deep flavor of Japanese cuisine menus.

We are particular about the seasonings we use in our dishes. For our "chilled whole tomatoes," which are popular among women, we use our special celery salt. Celery salt is a seasoning made from celery seed, an herb ground from celery seeds. The use of the herb's aromatic celery salt enhances the sweetness of the tomatoes.
