Beef kainomi is a part of the ribs that is located near the fillet. It is located right around the flank and is shaped like a shellfish, hence the name. It is very tender and you can taste the true flavor of the beef, and it is a very rare part of the beef because only a pair of blocks on each side can be obtained from a single cow. The main dish of this luxurious course is the kainomi steak.
