This time, we would like to introduce "Deep-fried Minamishimabara Shiitake Mushrooms with Garland Chrysanthemum Batter" from our autumn special menu. These days, any vegetable can be found in supermarkets all year round, so many people may not be very conscious of the season of their foodstuffs. Do you know when shiitake mushrooms are in season? Most mushrooms are in season in the fall, but shiitake mushrooms are unusual in that they are in season twice a year, in spring and fall. Among them, shiitake mushrooms in autumn, called "akiko," are characterized by a better aroma than at other times of the year.
The shiitake mushrooms we use are from Minamishimabara. Minamishimabara is located in the southern part of Shimabara Peninsula, Nagasaki Prefecture. Recently, the ruins of Hara Castle, where the "Shimabara-Amakusa Putsch" ended, were registered as a World Heritage Site as part of the "Nagasaki and Amakusa Region Heritage Related to Submerged Christians". In Minami-Shimabara, shiitake mushroom cultivation is so popular that shiitake soft-serve ice cream is sold, and the area is famous for its thick-fleshed and flavorful shiitake mushrooms.
