Introducing a dish using our special soup stock and soy sauce! | Rakura Shinjuku East Exit

Hello, I am the PR person in charge of Rakuzo Shinjuku East Exit Store.

Dashi (Japanese soup stock) and shoyu (soy sauce) are the basis of Japanese cuisine.

These are probably the two tastes that come to mind when people think of Japanese food.

We introduce our special dashi broth and soy sauce.

 

Rakura's special soup stock

Our dashi broth is characterized by its mellow aroma and flavor.

The bonito flakes used as the base are high-quality bonito flakes from Makurazaki, Kagoshima Prefecture. The broth is full of mixed flakes made from bonito flakes and other fish, which are made with a lot of care and attention, resulting in a deep flavor.

Kombu, another base for dashi, is made from Hokkaido's makombu kelp. The dashi broth is made using the high-quality sweetness of the kelp.

Dashimaki Tamago is one of our most popular items. The dashimaki tamago is richly flavored with dashi broth for a mellow taste.

 

Rakura's Specialty Soy Sauce

At Rakura, we are particular about soy sauce, the heart and soul of the Japanese people. For water, which is said to be the lifeblood of soy sauce, we use underground water from the Hakkouda Federation in Aomori Prefecture, which flows in the layer below the river known as subsoil water. For salt, natural salt from Australia's world-class Shark Bay is used, giving it a mellow flavor.

Sashimi is the best way to enjoy this special soy sauce. Please enjoy it with our fresh seafood.
