Dashimaki Tamago (rolled egg) using Makurazaki broth

The broth used for dashimaki tamago, one of the most popular snacks on the menu, is made from dashi broth with plenty of bonito flakes from Makurazaki in Kagoshima Prefecture.

The omelette is baked in a broth made from Hokkaido kelp, and the aroma and flavor of the broth spreads as soon as it enters the mouth.

One of Rakura's most popular menu items is seasonal fresh sashimi. Soy sauce is the key ingredient that enhances these dishes, and at Rakuzo, we are particular about soy sauce.

The soy sauce used in various dishes is made with water from the Hakkouda mountain range and natural salt from Shark Bay.

It does not diminish the taste of the ingredients, but gives them a deeper flavor, and is truly a "supporting role.

Rakuzo offers Mitake, a shochu made with water from Yakushima Island, which has been selected as one of the "100 best waters in Japan.

Mitake became nationally known during the shochu boom, but until then, it was a premier shochu, highly regarded by sake lovers.

As a standard Satsuma shochu, we also recommend it to accompany delicious dishes.
