In this issue, we will introduce in detail one of our signature dishes, the "Daisen Dori" yakitori skewer.
We use "Daisen Dori" for our yakitori. Daisen chicken is carefully raised in the foothills of Mt. Daisen where there is fresh air and clean water. The meat has a good balance of fat and flavor and is very tender.
Yakitori is a simple dish of skewered chicken meat that is seared to perfection. Because of its simplicity, the skill of the chef is easily conveyed, and we are constantly improving our skills.
When searing chicken, various factors affect the flavor, such as the distance between the fire and the chicken, the amount of heat, the time of searing, and the timing of raising the chicken. Various parts of the Daisen chicken yakitori are available, such as momo (thigh), negima (green onion), and chicken skin. When ordering any of these parts, you can choose between tare (sauce) and shio (salt) seasoning.
In addition to yakitori skewers, we also offer an exquisite tamago-kakegohan (rice topped with egg) called "Yakitori Tsukune no TKG (Yakitori Tsukune TKG to finish)," which is topped with a dab of Tsukune skewers as it is.
