At Rakura, we serve fresh sashimi that goes well with sake. We carefully select the best soy sauce to go with such sashimi.

We use underground water from the Hakkouda Federation and natural salt from Shark Bay, a World Heritage site. It has a mild taste and goes well with sashimi, so when ordering sashimi, please feel the presence of soy sauce as well.

It is said that the taste of Japanese food is determined by the soup stock. At Rakurakura, we use the highest quality soy sauce with a light flavor, and make our soup stock with plenty of bonito flakes and mixed flakes from Makurazaki and konbu (kelp) from Hokkaido.
