Hello, I am the PR person in charge of Rakuzo Utage Shin-Yokohama store.
We have tried to create dishes from other countries with a Japanese flavor, or Japanese food with ingredients from other countries, in order to better suit the Japanese palate and to create more enjoyable variations.
The Shin-Yokohama branch of Rakuzo Utage also offers such a blend of Japanese and Western cuisine.
Ahijo is originally a Spanish dish. It is sometimes called "olive oil stew" because of the abundance of seafood in olive oil, but the meaning of ajillo itself is chopped garlic, and the main ingredient is the garlic rather than the olive oil.
Shrimp, oysters, and sardines are standard items for ahi jō, but at the Shin-Yokohama branch of Rakuzo Utage, we made this dish using shirasu, a young sardine fish. Shirasu is very Japanese. We also added nori (seaweed). Please try it and see how it tastes. We recommend dipping the bucket in garlic-flavored oil and tasting it.

Prosciutto is mostly imported from Italy, while avocados are native to Mexico. The combination of these two ingredients, plus the addition of Japan, is interestingly fused in tempura, a dish that is representative of Japanese cuisine. Seafood and vegetables are the standard ingredients for tempura, but the rich, sticky flavor of avocado becomes a little lighter when fried, and the saltiness of the prosciutto adds a delightful taste.
