In this issue, we pick up the eternal standard and ace "grilled fish" to introduce to you.
There are many types of grilled fish, but one of the most popular is "Saikyo-yaki Aka-gyo" (grilled red fish with saikyo miso), which has an addictive sweet taste. The red fish is coated with Saikyo miso, a type of soybean paste commonly used in Kyoto cuisine, and grilled to perfection, giving it an unmistakable sweetness that makes it exceptionally delicious! The meat of red fish is easy to loosen and the bones can be easily removed, so it is recommended even for those who do not like bones in grilled fish.
Sake and slightly salty grilled fish is a timeless standard. And the combination could not be more perfect, making you feel at ease even before you eat it. The "hokke no ichiboshi" (dried hokke overnight) is served freshly grilled and hot. The juicy hokke fat overflowing from the plump meat will keep your chopsticks clenched in your hands. It is also good with beer or shochu.
What kind of fish will appear today? The "Today's Kama-yaki" comes with the excitement of "What kind of fish will appear today? As which fish kama is used depends on the day's procurement, you will find different enjoyment no matter how many times you visit our restaurant.
