Have you checked out our "Season's Recommendations" yet? Currently, we have a spring menu, which includes excellent dishes made with ingredients that are in season and specially priced for a limited time only. In this issue, we would like to introduce dishes using seasonal ingredients from the "Season's Recommendations" menu.

Creative skewers are a must-try!

The "Spring Shiitake Mushroom Skewer with Prosciutto Cream Cheese" is a masterpiece of grilled shiitake mushrooms that have survived the winter. The simple grilling of these skewers is delicious, but the chef's taste has given them a slightly Western flavor. The rich cream cheese adds to the satisfying taste. The saltiness of the prosciutto accents the overall flavor. We hope you will enjoy these skewers, which are a step above the taste of your imagination. They taste even better when paired with a draft beer or lemon sour!

Delicious deep-fried bamboo shoots.

When it comes to karaage, young chicken is the standard. In "Season's Recommendation," you can enjoy fried bamboo shoots as "Deep-fried bamboo shoots in dashi broth with butterbur miso. Before deep frying, the bamboo shoots are cooked in dashi broth once, so the flavor is well soaked into the bamboo shoots. The fried bamboo shoots are truly exquisite, the result of time and effort! Since the bamboo shoots are seasoned, they can be served with fuki miso or as is.

Other dishes include "Loaded Fried Miso Meat & Cheese," with its rich umami and satisfying taste, and "Charcoal Grilled Bonito Tataki from Yaizu," which offers the refreshing taste of spring.
