Ingredients are in season according to the season. Our restaurant's style is to offer dishes that make the most of these ingredients. This fall, too, you can enjoy dishes that bring out the best of the ingredients.
Although leeks are well-known as an ingredient that can be eaten all year round, did you know that they are in season from fall to spring? In order to show you the benefits of leeks in season, we put a heaping pile of leeks on chilled tofu.
The outstanding crunchiness of leeks is a texture that can only be found in season. The leek, which plays a supporting role, becomes the star in this dish.
Even mushrooms are still in season. We grilled these delicious and meaty shiitake mushrooms on skewers.
These shiitake mushrooms are produced in Minamishimabara, Nagasaki Prefecture. It is a top quality product harvested in an area surrounded by clean air and delicious water. Enjoy the thick meaty flesh filled with flavor.
A dish of pickled turnips and Chinese cabbage, which are in season at this time of year. It is an easy-to-eat assortment that can be served with either sake or rice.
The more you chew, the more flavorful it tastes.
