Our restaurant offers a menu that is particular about spices and seasonings. In this issue, we would like to introduce our restaurant's commitment to seasonings that support the flavor of our delicious dishes.

 

Carefully selected dashi broth made from Makurazaki bonito flakes, mixed flakes, and Hokkaido kelp is used for Japanese cuisine.

It is said that the flavor of Japanese food is determined by the depth of the dashi broth.

We use soup stock made from bonito flakes produced using a traditional method handed down for over 300 years in Makurazaki City, Kagoshima Prefecture, mixed flakes full of the flavor of fish other than bonito, and Hokkaido kelp.

The combination of animal umami components derived from fish and vegetable umami components derived from kelp supports the deep flavor of Japanese cuisine menus.

 

Attention to herb-based seasonings for Western-style menus

Our restaurant is particular about seasonings for Western-style menus as well as Japanese-style soup stock.

For example, the "Whole Cold Tomatoes," a popular salad menu item among women, uses celery salt, which has a strong herbal flavor. Celery salt is a seasoning that combines salt and "celery seed," an herb made from ground celery seeds. It enhances the sweetness of the tomatoes with a fruity flavor.
