What kind of fish is a "Yaitoh grouper"?


Have you ever heard of the "Yaitohata" fish? Yaitohata is a saltwater fish belonging to the family of groupers of the perch family, and is known as a high-class fish along with kue, which is also a member of the grouper family. It may look a little grotesque with its countless black spots all over its body, but its taste is different from its appearance, being light with an exquisite mildness and sweetness, and its texture is melt-in-your-mouth enjoyable.

We serve "Yaitohata no takikiawase," a dish of seasonal Yaitohata cooked with vegetables and tofu.
