The cool air is getting colder and autumn is finally deepening.
Autumn is also known as the season of tastes, and many delicious foods are available.
Salmon is probably one of the most typical autumn foods.
In this issue, we looked at salmon.
Salmon are migratory fish, born in the river, raised in the sea, and return to the river of their birth to spawn.
Originally a white-fleshed fish, the color of the bait it eats is said to be the color of its body.
There are many different types of salmon, but only one type, the chum salmon, runs up the rivers of Japan.
Salmon is in season from September to November, although it seems like we eat it any time of the year.
They return to the river where they were born to spawn in the fall, and are called "autumn salmon" because they are fatty before spawning.
By the way, salmon caught between May and July is called "Tokidashi" or "Toki Salmon.
You will be able to enjoy the taste of salmon, the season of autumn, in abundance.
