In May, when the refreshing breeze of early summer is in the air, our restaurant continues to offer exquisite dishes featuring the delicious flavors of spring. These are special dishes that can only be enjoyed during this season—our top recommendations, crafted with the utmost care by our chefs.

Bonito is in season twice a year. The spring bonito, known as “hatsu-katsuo,” is low in fat and has a light, refreshing flavor.
This “Freshly Grilled Tataki-Style Bonito” features that very first bonito of the season. By searing it over high heat, we’ve locked in the bonito’s natural umami for an even more delicious flavor. Enjoy it with four types of condiments and ponzu sauce for a refreshing meal.

This is the “Spring Shiitake Mushroom, Prosciutto, and Cream Cheese Skewer.” Having weathered the winter cold, these shiitake mushrooms have a firm texture and are characterized by a concentrated, rich umami flavor. The saltiness of the prosciutto and the mellow richness of the cream cheese pair perfectly with the rich, aromatic flavor of the spring shiitake mushrooms. Another great feature is how easy they are to eat—just grab one and take a bite.

We are also currently offering “Negitoro Yukke Platter with Kimchi-Cheese Sushi Rolls,” served with an egg yolk sauce, and “Deep-Fried Spanish Mackerel and Bamboo Shoots,” which is brimming with the scents of spring.
