Hello, I am the PR manager for the Kyoto Ekimae branch of Rakuzo Utage, a private room restaurant.

In this issue, we introduce three types of elaborate dashimaki tamago (rolled egg) that allow you to fully enjoy the flavor of the restaurant's signature dashi broth.

 

Aroma of dashi broth to stimulate appetite

The royal road "dashi-scented dashi maki tamago (759 yen)," a concentrated product of craftsmanship and attention to detail, is the very basis of our dashi maki tamago.

Each omelet is carefully baked to order and has a rich broth aroma that overflows the moment you put your chopsticks into the omelet.
When you put it in your mouth, the soft and fluffy texture is accompanied by the delicious flavor of the carefully selected dashi broth. The dashi broth is further accentuated when served with a few drops of shoyu (soy sauce) drizzled over the accompanying grated daikon (grated radish), making it the perfect accompaniment to beer or sake.

 

A dish to warm you up during the cold flower season

Introducing the "Ankake Dashimaki Tamago (803 yen)," which will warm your heart to the core.

This luxurious menu item features our signature dashimaki tamago (rolled egg) topped with a generous amount of thick, specially made Japanese red bean paste. The thick bean paste adds a smooth texture to the fluffy texture of the egg and gives it an even richer flavor. The hot red bean paste gently envelops the egg, making it hard to cool down to the last minute and allowing you to feel the depth of the soup stock even more strongly. The umami-infused bean paste is like a complete soup in itself, providing a gentle and tender sense of security.

 

Evolutionary system with excellent compatibility

Last but not least is the Sukiyaki Dashimaki Sandwich (979 yen), an evolutionary menu item that combines playfulness and volume.

This is a unique dish that shines with the restaurant's unique character: sukiyaki cooked in sweet and spicy sauce sandwiched between dashimaki tamago (rolled egg). The juicy dashimaki tamago goes perfectly with the beef that has been thoroughly soaked in the sauce. One bite of this dish and the mildness of the egg and the rich umami of the sukiyaki combine to create a triumvirate of flavors.
