We’ve prepared “Spring Shiitake Mushroom Skewers with Prosciutto and Cream Cheese,” a simple way to enjoy shiitake mushrooms at the height of their season in spring. Having survived the winter, these shiitake mushrooms burst with umami when grilled. We’ve paired these flavorful spring shiitake mushrooms with prosciutto and cheese. The saltiness of the prosciutto and the richness of the cheese bring out the umami of the spring shiitake mushrooms.
