The temperature range is roughly divided into lukewarm (30-40°C) and hot (45-55°C).
Lukewarm heating expands the sweetness and aroma and creates a round mouthfeel, while hot heating tightens the spiciness and allows you to enjoy a tangy, sharp taste.
We recommend junmai sake for lukewarm heating because of the sweetness of the rice, and honjozo sake for hot heating because of its refreshing taste. Junmai sake also has a different flavor when heated, as the sweetness becomes umami and the flavor tightens up.
