The menu features a variety of spring ingredients such as sakura shrimps and scallion with starchy sauce on egg tofu and soaked scallion and bamboo shoots.

For the final meal, we offer eel hitsu-mabushi. The mellow flavor of the fluffy grilled eel is a perfect ending to the course.
