An Unexpected Combination! A Pairing Experience That Opens the Door to New Flavors

Hello. I’m the PR representative for RAKUZO, the private dining restaurant in Utsunomiya’s Ikegami district.

With the sound of cicadas filling the air, the full heat of summer has arrived. As the sun grows stronger this time of year, many of you are probably looking to refresh yourselves with cold drinks and carefully crafted dishes. Today, we’d like to share the appeal of food and drink pairings—combining our restaurant’s signature creative Japanese cuisine with a wide variety of beverages—so you can enjoy a whole new culinary experience.

An Unexpected Pairing of Hot Pot Dishes and Drinks

Our restaurant offers hot pot dishes packed with rich umami flavor, such as the “White Offal Hot Pot Course” and the “Taiwanese Offal Hot Pot Course.” While people often pair hot pot dishes with specific drinks, choosing from the approximately 100 varieties included in our premium all-you-can-drink plan can lead to surprising discoveries. For example, pairing the rich, creamy broth of the White Offal Hot Pot with a drink that has a refreshing, tangy acidity actually brings out the sweetness of the fat even more. Similarly, pairing the Taiwanese Offal Hot Pot’s fiery heat with a full-bodied alcoholic beverage transforms the spiciness into a mellow, rounded flavor, elevating it to a deeper, more complex taste. The joy of discovering your own unique combinations is a unique highlight of dining at our restaurant.

An Exploration of Flavors Through a Fusion Course of Japanese and Western Cuisine

As the name suggests, the “Japanese-Western Fusion Course” is a luxurious eight-course meal that blends Japanese and Western elements. The appeal of this course lies in the ability to switch drinks to match the changing flavors of each dish. For example, you can pair light beverages with the delicate flavors of Japanese dashi, and full-bodied beverages with Western dishes featuring rich sauces, creating a contrast of flavors throughout the entire course. By experimenting with pairings that transcend culinary genres, you’ll rediscover the full potential of the ingredients. While the Standard All-You-Can-Drink Plan offers a sufficient selection of about 60 varieties, the Premium Plan allows for even more nuanced flavor adjustments, deepening your culinary exploration.

An Intimate Pairing Experience for Adults in a Private Setting

To fully savor the joys of food and wine pairing, an environment where you can concentrate without worrying about those around you is essential. All of our seating is in private rooms, and we offer a variety of spaces—from tables for two to private rooms with sunken kotatsu tables for eight, and even private rooms that can accommodate up to 18 guests. Spending time in a quiet private room, leisurely exploring the harmony between food and drink, is truly a sophisticated indulgence. Whether for business meetings or special occasions, it’s wonderful to share the discovery of new flavors while enjoying conversation with someone special. The subdued lighting and private atmosphere heighten your focus on the flavors, creating a dining experience that’s a cut above the ordinary. We invite you to visit us and discover your favorite food and drink pairings.
